Friday is more than half over and the weekend is quickly approaching. From the looks of it, New York is in for some rainy weather over the next few days.
Perfect timing, right?
But being cooped up in my apartment because of rain can have its benefits. Staying indoors will provide me with time to bake up another batch of Coffee Cake Muffins. Deliciously sweetened by a mixture of brown sugar, butter, and cinnamon, these muffins make the perfect weekend breakfast. Especially when paired with a large mug of freshly brewed coffee.
I found the recipe for
Coffee Cake Muffins in Mark Bittman's 10th-anniversary edition of
How to Cook Everything, a Christmas gift given to me by my boyfriend's parents. I'm almost embarrassed to admit that I've hardly touched the cookbook since I received it last December. It's not that I have anything against Bittman's recipes -- I'm actually quite a fan. Truthfully, the low frequency of use of the cookbook can be attributed to this obligatory need I possess to create and prepare as many original recipes as possible so I can post them on this blog. Most of my cookbooks have gone untouched over the last year.
Because the recipe for the muffins is not my own and I did not make any emendations to it, I am not publishing the recipe here. I do not, however, have any problems with posting the pictures I took of the muffins after they came out of the oven. Don't they look delicious?? If you have a copy of Bittman's cookbook, the recipe ("Muffins, Infinite Ways") can be found on pages 832-33.
