Those who know my eating habits really well can talk about my strong dislike for sour cream. Just the thought of it topping any food I'm about to ingest makes me a bit queasy. The funny thing is, if it's mixed into a dip or a sauce, I'll more than likely eat it. I just can't deal with it being used as a condiment.
With that being said, for me to come up with a recipe that calls for an
entire container of sour cream is practically unbelievable. I've been trying to revisit foods I once cast off in order to give them another try. (I survived the olive revisit, but I'm still not a fan.) Given my love for sour cream and onion potato chips, I figured a potato dish would be the best way for me to revisit sour cream. And, I was really surprised by how much I enjoyed these mashed potatoes! Especially paired with the meatloaf I made on Sunday. There's hope for me and sour cream yet.
These mashed potatoes are great as they are or when topped with gravy. However, they'd be just as delicious - or dare I say, even more delicious - with some roasted garlic or with some crumbled bacon mixed in and shredded cheddar cheese on top.

Sour Cream and Onion Mashed Potatoes

INGREDIENTS
- 4 large russet potatoes, peeled and chopped into medium-sized pieces
- 4 tablespoons butter
- 1 8-ounce container reduced-fat sour cream
- 1/2 cup milk
- 1 scallion, finely sliced
- Salt and pepper, to taste
INSTRUCTIONS
- Bring a large pot of water to a boil. Boil the potatoes until fork tender, about 10-15 minutes. Drain well.
- In the same pot, combine potatoes with butter, sour cream, milk, scallion, salt, and pepper. Mash until there are no longer any large lumps. (If you prefer creamier potatoes, you can use a hand-mixer rather than a hand-held potato masher.)
- Serve immediately or keep warm until ready to serve.

Don't worry too much about my dad... the veracity of The Mashed Potato Story are a subject of vigorous debate each year... I'm a skeptic myself.
