You know how some people get really excited about the return of the Pumpkin Spice Latte at Starbucks? That's how excited I get about turning the calendar over to November. Because November means the coming of the holiday season and the celebration of Thanksgiving. As much as we look forward to spending the day in the company of loved ones, Stephen and I have decided to stay home this year so we can enjoy our first Thanksgiving as a family of three. Of course, staying home means that I'll be cooking the big meal, and I have to admit that I'm a little intimidated by the idea. I know I have to plan for certain must-haves -- roast turkey, apple chestnut stuffing , and green bean casserole -- but I'm having a hard time choosing which additional side dishes to make. When I think about it, the dish is a perfect culinary representation of my family. If you're a regular reader of Taste As You Go, then you already know that the caramelized onions represent my mother. Chorizo (chouriço) is something I grew up eating (and loving it!), as it's one of the main ingredients in the Portuguese dishes my father and my grandmother would make. Grandma would throw in some chouriço (pronounced "shu-REES" in her kitchen) in with the scrambled eggs at breakfast during my visits to my grandparents' house during the summer. Heaven!

With my parents and my grandmother covering two of the three main components of my dish, that just leaves the mashed potatoes. Hopefully, you can guess which member of my family is represented by the potatoes. (Hint: It's the person who writes this blog!) I absolutely love mashed potatoes and could probably eat them every day for the rest of my life if I could. The recipe here is really very simple and is a great way to use up any leftover mashed potatoes that you may have in the refrigerator. Whenever I make mashed potatoes, I make way more than one person could possibly consume at once so I'll have the leftovers to snack on.

INGREDIENTS
  • Caramelized onions, reheated if necessary
  • 1 teaspoon extra-virgin olive oil
  • 2 links chorizo
  • Mashed potatoes (either made fresh or reheated leftovers)

INSTRUCTIONS
  1. If you're not using leftover caramelized onions and need to make them from scratch, then start with those. Do the same if you're making the mashed potatoes from scratch. If you have already prepared caramelized onions and mashed potatoes, then proceed with the next step.

  2. Heat the olive oil in a large skillet over medium heat. Cook the chorizo for 10 minutes, rotating the links to ensure even browning. Once the the casing has started to crisp up, remove the links from the pan and pull the pan off the heat.

  3. Slice the links into 1/2-inch pieces. Return the slices to the pan and put the pan back on the heat. Cook the chorizo for 5 minutes. Turn the pieces over and cook another 5 minutes. Drain the chorizo on a plate lined with paper towels to remove some of the excess oil.

  4. Create a bed of mashed potatoes on each of two plates. Divide the chorizo into two portions and layer the pieces on top of the mashed potatoes. Top with warm caramelized onions and serve!
