Sharing our Menu Plan for April 6 - April 12, 2014.
Am I the only one who believes that spring awakens just about everything?
Landscapes are greener, flowers begin to bloom in every vibrant shade imaginable, and birds start singing again. But spring awakening is about so much more than that. New opportunities are knocking on every door and now is the time to decide which new pathways you want to open for yourself, which new journeys you want to embark on. I find myself saying "yes" more in the spring, agreeing to engage in everything possible and giving myself to new experiences.
Does this happen to you, too?
For example, let's just talk about my calendar. For the next two months, my weekends are booked with get-togethers with family and friends, speaking engagements, a trip to my favorite city to celebrate my birthday, and the culmination of eight months of work at the day job. It's enough to make anyone anxious about the potential for "dropping the ball", but I'm actually welcoming all the activity and can't wait to see what comes out of all of this.
Unfortunately, despite all of the fun things I have planned, some things will remain the same... like doing the laundry every weekend and mustering up the energy and inspiration for our weekly Menu Plans. ;-)
Menu Plan: April 6 - April 12, 2014
Sunday: Spaghetti and Basic Baked Meatballs

After seeing the disappointed look on Stephen's face after he discovered that I had not, in fact, made a batch of meatballs last week, I promised to make them for dinner tonight. I couldn't risk seeing that pout again.
Monday: "Big Salad" Night with Mixed Greens, Tomatoes, Cucumbers, Carrots, Hard-Boiled Egg, and Avocado
Tuesday: 10-Minute Broiled Chipotle Salmon Fillets with Couscous and Grilled Asparagus
Wednesday: Stephen's Choice
Thursday: Drinks Out with Coworkers (possibly Dinner Out, as well)
Friday: Pizza with Broccoli and Caramelized Onions
Saturday: Dinner Out with Friends
