What's for Dinner: March 10 - March 16
Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!

We hosted family and friends at our house yesterday to celebrate Caroline's birthday. Some of the most important people in our world filled every room of our home and added to her special day.
But, honestly... As much as we loved hosting our first get-together at the new house, I don't know what the heck we were thinking. A birthday party the day before Daylight Saving?
Insane.
By the time the party was over, we had two very exhausted children on our hands. We had less time to sleep it off thanks to the time change. Even after we all hit the hay by eight o'clock!
It would have been easy to go overboard for Caroline's fourth birthday. After all, you only turn four once.
But I did try and stay true to my theme for the year -- less is more. Minimal decorations. Simple food. Cupcakes from a boxed mix... with from-scratch cream cheese frosting. Because I have to add my own little touch somewhere... 😉 All in all, it was a wonderful day and my heart is full.
Of course, now, I'm wiped out. Which is why this post is coming so late in the day. I didn't have the energy to write anything last night, and I wanted to give myself a slow day today.
But it's time... Without further ado, here's what I've planned for dinner at our house this week.

Tuesday: Slow Cooker Salsa Pulled Chicken with Rice
