What's for Dinner: April 28 - May 4
Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!

I haven't written a long blog post in a while, so I hope you indulge me a bit...
Ever since we moved into our new house, I've been making a series of lists. Lists of things I want to change, areas I need to organize, and things I need to buy to make all that happen. I have a specific order of operations in mind so I can make logical transitions from one project to the next.
One of those projects was weeding out the items in my closet that no longer fit. As I went through each category of clothes, I made a note of the items I wanted to replace or upgrade. And then I hit a roadblock.
The next phase of the closet project had to do with finding a way to organize our towels, sheets, and extra blankets. Once I decided I was going to move Caroline's bigger-than-necessary dresser into our closet... I then had to research new dressers for her. I pictured finding one that we could tuck into one side of her closet to give her more room to play in her bedroom.
(This would set me up for future phases of her bedroom project.)
Since my parents had the kids this weekend, Stephen and I decided to drive down to IKEA to see what they had in stock. Five hours (and zero arguments!) later, we had a new dresser for her and a new storage bin for her growing collection of stuffed animals. We also picked up a new chair and shelving unit for the living room to take better control over the space.
My grand master plan worked. The need for better storage in our closet set into motion a handful of other projects on my list... and because I was strategic about my plan, I was able to tackle those projects without too much stress.
It was an exhausting weekend, but we're so happy with the results. Plus, the new arrangement has inspired me to identify more things I want to change... more areas I need to organize... and more things I need to buy. So fun!
Concentrating on the house took a lot of our energy this weekend, so I took my time cooking dinner tonight. (It helped that the kids ate a late lunch and, as a result, napped a little longer than usual.) Thank goodness I planned a family favorite for tonight. Turning to a go-to meal meant prep went quickly. And I opted to double the recipe so we'd have plenty for lunches for Stephen and the kids... and for Leftover Night on Thursday.

Monday: Instant Pot Minestrone Soup and Toasted Baguette Slices
Tuesday: Simple Chicken Cacciatore over Egg Noodles
Wednesday: Stephen's Choice
Thursday: Leftovers
Friday: Pizza Night
Saturday: Fluffy Pancakes and Sausage Patties with Maple Syrup and Fruit
