What's for Dinner: June 21 - June 27
Looking for dinner inspiration? Here's what I've planned for dinner at our house this week!

I usually have the best intentions when I have a blog post planned. I'm either going to write the post days in advance... or I'm going to write the post as soon as possible on the day I want to publish it.
Neither of those things has been happening for me.
The norm seems to have me rushing to write a post later in the evening on the day I want to publish it. But today, I have a good reason for writing so late.
I spent most of the day offline, celebrating Father's Day with Stephen and the kids. We started off with some delicious orange French toast then packed the kids in the car to run errands. While errands might sound like a mundane way to spend time together, these were things Dad wanted to do.
(To be honest, I'm surprised he didn't leave me home with the kids so he could have a few hours of peace and quiet!)
After we got home and ate lunch, Stephen headed out to do some work in the front garden. I stayed inside and attempted to reclaim parts of the house that the kids destroyed. (I was not successful.) Then, since the kids don't nap anymore and have no idea how to handle "quiet time"... I offered to let them play in the sprinkler. (Sprinkler = Mom spraying them with the hose.)
Good times... That is until the kids decided to jump in dirt after we turned the water off... It pretty much went downhill from there. But not before we enjoyed a messy meal of grilled barbecue chicken and potato salad for dinner.

- Sunday: Grilled Barbecue Chicken with Potato Salad
- Monday: Mongolian Meatball Ramen
- Tuesday: Grilled Salmon in Foil with Brown Rice Pilaf and Grilled Asparagus
- Wednesday: Leftovers
- Thursday: Instant Pot Pork Carnitas with Cilantro Lime Rice, Black Beans, and Avocado
- Friday: Pizza with Broccoli and Caramelized Onions
- Saturday: Leftovers
Yes! Two Leftover Nights this week!
It's going to be super hot over the next several days and I really don't want to be spending too much time in the kitchen.
