What's for Dinner: September 20 - September 26

Ever since school started, my evenings have blown up. Last week, I hosted two work events, one on Thursday and one on Friday. Tonight, I had back-to-back meetings for a volunteer position I took on earlier this month... Hence the late post.
Looking ahead, I have evening meetings on Tuesday, Thursday, and Friday... I may have to start drinking a cup of coffee after dinner to make it through to next weekend.
Anyone else super busy right now? 🙋🏻♀️
While I figure out how to navigate my calendar, here's our menu plan for the week. Keep reading to see what I've planned for dinner at our house!
What's for Dinner: September 20 - September 26
- Sunday: Stuffed Pepper Casserole
- Monday: Dr. Praeger's Veggie Burgers with Green Leaf Lettuce and Tomato and Sweet Potato Fries
- Tuesday: Monterey Chicken Skillet
- Wednesday: Leftover Night
- Thursday: PF Chang's Chicken Lettuce Wraps
My family actually prefers these lettuce wraps when I make them with ground turkey. That's the way I'll make them this week. - Friday: Spinach and Ricotta Calzones
- Saturday: Beef Stew with Sweet Potatoes
