What's for Dinner: September 27 - October 3

The past week has reminded me of a valuable lesson. If I know that I'm going into a super busy work week, then I can go easy on myself in the making-dinner department. I can plan for more than one Leftover Night. Or I can rely on some pre-made meals. Or we can plan to do take-out if the time isn't there to cook.
All those options are perfectly okay.
Another thing I can start doing more of is cooking more meals on the weekends that we can reheat later in the week. Especially since I can put our Instant Pot and slow cooker to work at the same time... making it easy to make two meals at once.
So far, I've found having a child in school is more demanding on my time than having two kids in preschool... and I'm going to need to make some more adjustments to get used to it. All I can do is my best, right?
I'm off to a relatively good start today. I mean, I'm sharing our menu plan for the week and the sun is still out!

What's for Dinner: September 27 - October 3
- Sunday: Beef Stew
I had planned to serve this stew for dinner last night. But the end of my week was so packed with evening meetings, I wound up moving things around.
We had a store-bought stromboli on Thursday, so I moved this meal to last night. Since I had the time, I went ahead and made the stew yesterday and we'll reheat it for tonight. Stew always tastes better the next day, so everyone was on board with this idea.
Knowing that tonight's dinner is already made is so freeing! - Monday: 10-Minute Maple-Glazed Salmon with Steamed Rice and Cucumber Salad with Herb Garlic Vinaigrette
- Tuesday: Rigatoni with Easy Vodka Sauce with Garlic Bread and Peas
- Wednesday: Leftover Night
- Thursday: Honey-Garlic Chicken with Steamed White Rice and Wilted Spinach with Garlic
- Friday: Cheese Pizza (for the kids) and White Pizza with Fresh Arugula and Prosciutto (for the parents)
- Saturday: Spaghetti with Basic Baked Meatballs and Marinara Sauce
