What's for Dinner: September 6 - September 12

After yesterday's frenzy of activity, I've slowed things way down today. We slept as late as possible. Then we had a lazy breakfast made from leftovers from last night's barbecue take-out. Then the kids and I read a new book before Stephen and I did what any parent would do on a Sunday morning... We kicked them outside to play for a bit. 😉
I know that life is going to get crazy (crazier?) once school starts on Thursday... So it's been super important to me to enjoy the last few days we have at home as a full family.
I hope you're all having a good weekend so far. Stay safe and, when you have a few minutes, go ahead and check out what I've planned for dinner at our house this week.
A Week of Dinners: September 6 - September 12
- Sunday: Salisbury Steak with Mushrooms over Buttered Egg Noodles with Green Beans
- Monday: Slow-Cooker Chicken Tortilla Soup
I'm going to use a rotisserie chicken for the soup and then use the remaining carcass to make homemade chicken broth since my freezer supply is running low. - Tuesday: Instant Pot Kielbasa, Mushroom, and Potato Soup and Peasant Bread
Let's hope I remember to bake that bread on Monday when I'm home. Otherwise, there will be no bread with dinner! 😂 - Wednesday: Leftovers
- Thursday: Monterey Chicken Skillet
- Friday: Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella
- Saturday: Breakfast for Dinner: Pancakes and Sausage
I'm hoping to pick up some local breakfast sausage from our favorite farmer's market. If they don't have any, then we'll just have pancakes without the side of meat.
