Thanksgiving.
It came. It went.
Normally, I get tired of eating the same meal day after day. But I can make an exception for Thanksgiving. Knowing the effort that went into cooking the meal makes the leftovers taste so much better. Plus, I'll be using some leftover turkey later this week to make one of Stephen's favorite meals.
With Thanksgiving in the rearview mirror, we've shifted our focus to Christmas. We headed to
a local tree farm yesterday, and Stephen cut down
our Christmas tree. This was the earliest we've ever gotten a tree... But with the year it's been, why not start the festivities a little early?
It's been fun taking our decorations out of storage and setting them up around the house. The kids and I have already started making a list of the types of
cookies we'd like to bake for Santa... and I've already started shopping for
some gifts.

A Week of Dinners: November 29 - December 5
- Sunday: Penne with Kitchen Pantry Tomato Sauce
For the sauce, I had a container of fresh tomatoes on the counter, so I chopped those up. I browned some garlic in some olive oil and then added the chopped tomatoes. Then I added, to taste, salt, pepper, and fresh basil from our windowsill garden. Then a splash of white wine and a small pat of butter. SO GOOD!
- Monday: Instant Pot Minestrone Soup (adapted)
- Tuesday: Turkey Tetrazzini
- Wednesday: Leftovers
- Thursday: Healthier Tater Tot Casserole
- Friday: Pizza with Broccoli and Caramelized Onions
- Saturday: Panko-Crusted Honey Ginger Shrimp with White Rice and Sugar Snap Peas
With any luck, I'll be able to take new photos of this recipe. Because they desperately need updating!
