What's for Dinner: December 20 - December 26

Three more days of work and five more days until Christmas.
We found our Christmas tree the weekend after Thanksgiving... and we decorated the house in the days right after. Most of the gifts are here thanks to careful planning, though all need wrapping. We've baked three different kinds of cookies for Santa (this kind, this kind, and this kind) ... and I'm considering baking a fourth.
I've already planned Christmas dinner (keep reading!)... and Stephen has claimed responsibility for the menus for New Year's Eve and New Year's Day. But even with all this progress, it still seems as if I'm coming up short.
With everything our family has endured this year, I had it in my head to go all out for the holidays. (Like Thanksgiving.) Unfortunately, the energy to do so hasn't been there... so now I'm disappointed that I'm failing to achieve a ridiculous goal that I imposed on myself.
While I figure out how to dig up the energy to push through these next few days... why don't you check out our menu plan for the week?
PS. Is there anyone else out there who wishes they could do more right now but doesn't have the energy to make it happen? 🙋
A Week of Dinners: December 20 - December 26
- Sunday: Southwestern-Spiced Pork Tenderloin with White Rice and Maple-Roasted Carrots
If you have the time, then I highly recommend brining the pork before cooking. It makes such a difference! - Monday: 10-Minute Maple-Glazed Salmon and Easy Green Salad with Maple-Dijon Vinaigrette
This Maple-Dijon Vinaigrette is our family's new favorite salad dressing. Simple and delicious! - Tuesday: Instant Pot Kielbasa, Mushroom, and Potato Soup and Peasant Bread
- Wednesday: Leftovers
- Thursday / Christmas Eve: Oven-Fried Southern Hot Honey Chicken Sandwiches with Bread & Butter Pickles served with Vinegar Coleslaw and French Fries
- Friday / Christmas: Braised Beef Short Ribs in Red Wine Sauce with Mashed Potatoes and Green Salad with Citrus Salad Dressing
- Saturday: Take-Out
