What's for Dinner: January 31 - February 6

I did it.
I made it through a long work week and rolled right into a packed weekend. Starting on Friday night, I participated in a weekend-long virtual leadership training conference... that ended just a little bit ago.
The training provided essential information about what it takes to be a leader... as well as what it takes to inspire others to lead. It was an honor to be a part of this experience, as it's forced me to consider (and reconsider) a lot.
After all this, I should be tired... But I actually feel energized. I'm ready to jump back into my responsibilities as a volunteer in a leadership position with both feet. And, somehow, I even found the energy to prep my bullet journal for February!
Now it's time to squeeze in some time with the family. Because I was practically glued to my computer for the majority of the weekend... I've only seen them in little spurts.

A Week of Dinners: January 31 - February 6
- Sunday: Fish Sticks, Tater Tots, and Green Peas
By special request of our youngest. 😂 - Monday: Instant Pot Minestrone Soup and Peasant Bread
- Tuesday: Ridiculously Easy Macaroni and Cheese, Hot Dogs, and Roasted Broccoli
- Wednesday: Leftovers
- Thursday: Stuffed Pepper Casserole
- Friday: Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella
- Saturday: Italian Wedding Soup
This week, I've chosen to take updated photos for my Italian Wedding Soup recipe. So overdue!
