What's for Dinner: March 14 - March 20

Today marks the one-year anniversary of our lockdown.
One year.
This time last year, we had planned to host family and friends for our daughter's fifth birthday party. We remember being so excited about the party because she had picked a Pancakes and Pajamas theme. (And I remember being frantic about how I was going to keep all the pancakes warm.)
Then the world changed overnight.
It's been a stressful year, for sure. But I continue to be grateful that our family has remained healthy through it all. The past year has presented challenges and inconveniences... But, in the grand scheme of it, we're very fortunate to be where we are right now.
So, to celebrate our gratitude, I have a special dinner planned for tonight. Keep reading to see what it is!
A Week of Dinners: March 14 - March 20
- Sunday: Grilled Beef Tenderloin with Fiery Pomegranate Sauce, Steamed Rice, and Steamed Sugar Snap Peas
- Tuesday: Sausage and Peppers and Onions over White Rice
- Thursday: Leftovers
- Friday: Pizza with Broccoli and Caramelized Onions
- Saturday: Weeknight Cheese Enchiladas with Mexican-Style Rice with Corn and Beans
