What's for Dinner: April 4 - April 10
I thought I'd open this post with a little throwback to Easter 2019.
It was the first Easter in our new house... and I still remember how happy I felt watching the kids hunting for eggs in the yard. 🐰 This photo is one of my favorites from that morning because J looked so cute in his dino PJs and rain boots.
Like last year, we'll be staying home this Easter. It's sad because we'd normally be heading to my parents' house for brunch. But we're not quite ready to attend any large family get-togethers yet, so a smaller celebration at home it is.
Since I'm making a special Easter dinner, my husband promised to take care of brunch. He's planning on making brioche French toast with berries. To go along with that, he's going to make blood orange mimosas for the adults 🥂 and a fun fizzy drink for the kids.
I'm looking forward to it!
It'll give me just enough fuel to get through our Easter festivities and a few hundred loads of laundry. If you're celebrating the holiday today, enjoy!

A Week of Dinners: April 4 - April 10
- Sunday: Roasted Pork Tenderloin with Scalloped Potatoes and Green Beans plus this cake for dessert
- Monday: Chile Baked Salmon with Lime Butter with Jasmine Rice and Roasted Broccoli
- Tuesday: Three Bean Turkey Chili (adapted from this recipe) and Honey Corn Bread
- Wednesday: Leftovers
- Thursday: Tortellini with Marinara Sauce
- Friday: Pizza with Broccoli, Mushrooms, and Caramelized Onions
- Saturday: Weeknight Beef Stroganoff
I had this one the menu plan a couple of weeks ago, but when it came time to make it, I just didn't want to. So I threw the beef in the freezer and added it this week instead.
