What's for Dinner: May 23 - May 29

I've been a horrible blogger lately.
Because we're almost at the end of the school year for our 6yo, my attention has been elsewhere. She's wiped after a very challenging year... and my husband and I are trying to keep her as focused as possible to make it across the finish line.
We're so grateful that she's been able to learn in person and make new friends, but it's been exhausting for us all. Especially while juggling our jobs and the protocols in place at our son's school.
I'll be happy come June. She'll be out of school and I'll be able to take some more time off from work so I can recharge a bit.
To get us there, I've had to let some things slide to the bottom of my to-do list. Since I know how much you value our weekly menu plans, I didn't want to skip this post. Eventually, I'll get around to finishing that recipe post that's been in my drafts forever.

A Week of Dinners: May 23 - May 29
- Sunday: Chopped Turkey and Gravy over Mashed Potatoes with Corn
I have a knack for planning a meal with mashed potatoes on the hottest night of the week. This meal was no exception. - Monday: Shrimp Fried Rice with Fiery Lime Sauce
- Tuesday: Slow-Cooker Chicken Fajitas
- Wednesday: Leftovers
- Thursday: Stephen's Choice
IT'S BACK!
After a loooooooooong hiatus, I am officially granting my husband the pleasure of cooking dinner one night per week again.
Let's see if he remembers our discussion about this. 😉 - Friday: Pizza with Spinach and Mushrooms
- Saturday: Grilled Flank Steak with Fiery Pomegranate Sauce, Steamed White Rice, and Roasted Broccoli
