What's for Dinner: May 30 - June 5

I'm not sure what the weather is like where you live, but it's been a rainy weekend in our little corner of Connecticut. It's been raining on and off since Friday night, which means we've been stuck inside for most of the weekend.
I went into the weekend thinking I'd make some more home projects like this one. But then I did something completely off-brand... I left my bullet journal closed for most of the weekend and I've ignored most of my to-do list in favor of slowing down.
I've even insisted that we go off-script for our dinners. I had planned on grilling steak... or having my husband grill steak... and then serving it with my famous Fiery Pomegranate Sauce. But it was pouring last night, so I suggested take-out from one of our favorite local restaurants.
And tonight?
We're going to have leftovers instead of having what I originally planned. (I was going to make a huge batch of pasta salad with fresh vegetables.) I didn't see the point in making new food when we have plenty of leftovers to work through in the fridge.
Before I make my way into the kitchen to start heating things up, here's our menu plan for the week!
A Week of Dinners: May 30 - June 5
- Sunday: Leftovers
- Monday: Grilled Cheeseburgers on Potato Buns with Caramelized Onions and Potato Salad
- Tuesday: Pasta Salad with Tomatoes, Cucumbers, Carrots, Bell Peppers, Hard-Boiled Eggs, Cheese, and Broccoli with Maple Dijon Vinaigrette
- Wednesday: Dinner Out for Mom and Dad | Take-Out Pizza for the Kids
For the first time in well over a year, my husband and I have hired a babysitter and are GOING OUT. Some of the parents of the kids in our daughter's kindergarten class have decided to get together before the last day of school to celebrate making it through this challenging year. While we're out, the kids can enjoy take-out pizza and whatever snacks they manage to convince the sitter to let them have. - Thursday: Ground Turkey Taco Night with Homemade Taco Seasoning
I originally planned to make tacos on Tuesday but bumped them to Thursday in the menu plan reshuffle. Thursday would have been a Stephen's Choice night, so maybe I'll just put him in charge of making tacos happen. - Friday: Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella
- Saturday: Dinner Out
I have to work on Saturday but then I'll meet the family for a coworker's daughter's birthday party. It feels nice having some social events on our calendar again!
