What's for Dinner: July 11 - July 17

Wow. What an exhausting weekend at our house!
That is... it was an exhausting weekend for the parents. We devoted twelve hours on Saturday to painting our daughter's bedroom. We finally made good on her big birthday present (her birthday was in March)... and we checked off ✔️ another item on our Summer Bucket List.
Then we spent a good chunk of the day today moving her back into her room. I am intentionally going slowly with this process so we have time to take inventory. Once we know what she has, we can decide what's worth keeping.
She's developed into a bit of a packrat, so this is 100% necessary. 😂 Anyway... that's why this week's menu plan is coming to you so late.
The funny thing is, I had this week's menu plan done six days ago. I usually menu plan on Mondays... but I'm finding it harder and harder to do each week. So, this week, I took a different approach and asked for input from the kids.
They were actually quick to make suggestions! And when the kids struggled for ideas, my husband jumped in with a few of his own. In no time, I had a week's worth of dinners planned out with minimal effort on my part.
I often feel burdened by the responsibilities related to making dinner. Having the whole family pitch in took a lot of the stress I usually feel out of the equation... and it helped me show the kids that making dinner involves so much more than just cooking. This approach worked so well, I might enlist their help more often! 😉

A Week of Dinners: July 11 - July 17
- Sunday: Spaghetti and Basic Baked Meatballs with Garlic Bread
- Wednesday: Leftovers
- Thursday: Stephen's Choice
(He's leaning toward making some type of pasta dish with grilled vegetables.) - Friday: Pizza with Mushrooms, Spinach, and Pepperoni
- Saturday: Farmer's Market Pasta Salad with Maple Dijon Vinaigrette
