What's for Dinner: September 5 - September 11

It's early afternoon, and I'm still in my pajamas. And, if I'm being honest, I'm not sure I'm going to change out of my pajamas today. Because I like the idea of enjoying a somewhat lazy day.
I say "somewhat" because I do have mountains of laundry to do. And I'll need to cook dinner later... But other than that, I'm going to try and go easy on myself this long weekend. Because as soon as our daughter's school year begins, we're going to be off to the races.

PS. Okay, fine. As soon as I'm done with this blog post, I'll probably take a shower and put on fresh pajamas. Because I'll all about having a Pajama Day... but I can't do it without taking a shower. 😂
A Week of Dinners: September 5 - September 11
- Sunday: Spicy Maple Glazed Salmon with Jasmine Rice and Cucumber Salad with Herb Garlic Vinaigrette
- Monday: Grilled Burgers with Cheddar and Caramelized Onions and Summer Peach Spinach Salad with Avocado
- Tuesday: Slow Cooker Chicken Burrito Bowls
- Wednesday: Leftovers
- Thursday: Ridiculously Easy Macaroni and Cheese with Steamed Broccoli
I let our daughter choose Thursday's dinner in celebration of her first day of first grade. I'm pleasantly surprised she picked something that's super simple to pull together.
Update: We had plenty of leftovers this week, so we did two nights of leftovers, bumping the mac-and-cheese to Saturday. - Friday: Margherita Pizza
- Saturday: Three Bean Chili with Homemade Chili Seasoning
I'm going to make this batch with ground turkey instead of ground beef. Over the years, we've started eating less red meat, and now we actually prefer our chili with turkey.
Update: Because we bumped Thursday's mac-and-cheese to Saturday, I bumped the turkey chili to next week (Sunday).
