What's for Dinner: October 10 - October 16

After battling a nasty cold for more than a week, I'm finally feeling better. I still have some lingering congestion, but I'm so much better than I was.
(Thank goodness!)
I'm getting back to my regular day-to-day routine... and I've been able to tackle some small projects around the house. Plus, since my husband wasn't traveling for work this weekend, I made sure we got out of the house for some family fun.
My goal this week is to get my blogging back on track... because, of course, I was all set to share a new recipe post last week until that cold took me down.

A Week of Dinners: October 10 - October 16
- Sunday: Stuffed Pepper Casserole
- Monday: White Bean Enchilada Soup
- Tuesday: Ground Turkey Taco Night with Homemade Taco Seasoning
- Wednesday: Leftovers
- Thursday: Penne with Garlic and Olive Oil and Roasted Broccoli
- Friday: Frozen Pizza and Movie Night
This has turned into a beloved alternative to our Friday Pizza Nights. When my husband has a work trip on the calendar, I plan a Frozen Pizza Night and then let the kids choose a movie to watch while we eat.
Some weeks, I love this morning that making our pizza from scratch. - Saturday: Take-Out
My husband won't be the only one working this coming weekend. I have to be at work for most of the day on Saturday, so the kids are going to have an overnight visit at my parents' house. That means I'm solo for dinner, so I'm most definitely NOT cooking. 😉
I'm seriously considering this as an option... What do you think?
