I know we had to roll the clocks back last weekend... but did anyone else's week feel super long?

While the kids handled the time change all right at first, things went off the rails by the end of the week. Kids' crankiness (and our son's random eye incident) aside... I tackled the items on my to-do list in a major way, including sharing this year's Holiday Gift Guide.

I guess I have a good reason for feeling so drained.

As for this week, we have another full schedule on our hands. This is our daughter's last week of school before Thanksgiving break. Plus she's due to get the first dose of her COVID-19 vaccine on Thursday. 

I have some important work events and meetings to juggle... but the hardest part of my week happens on Saturday. We're due to attend a memorial service for my grandmother that morning. She passed away a month ago, and this is the first chance we'll be able to gather as a family to mourn her loss.

At least I know the evenings will go more smoothly with our menu plan in place. Keep reading to see what's on deck for dinner at our house this week... and please send some encouraging thoughts to help us make it through everything in one piece.

A Week of Dinners: November 14 - November 20

  • SundaySlow Cooker Taco Chicken Bowls 

    I made a double-batch of chicken today. One batch will be for dinner tonight and for leftovers later in the week. The other batch will go in our freezer for another night down the road... when I don't feel like cooking anything from scratch.

  • MondayApple Orchard Salad with Maple-Dijon Vinaigrette 

    I decided to make things easier on myself by caramelizing the onions for this salad tonight. That way it's all about salad assembly tomorrow night.

  • Tuesday: Leftover Night

    Since my work event falls on Tuesday night this week, I moved Leftover Night up by a day. Between leftovers from late last week and the leftovers we'll have from tonight's dinner, there will be plenty to feed my husband and the kids while I'm out.

  • Wednesday: Fresh Fettuccine with Homemade Alfredo Sauce and Roasted Broccoli

  • ThursdayItalian Sausage and Gnocchi Skillet 

  • Friday: Margherita Pizza (for the adults) and Frozen Supreme Pizza (for the kids)

  • Saturday: Leftover Night -or- Fish Sticks with Smiley Fries and Peas and Carrots -or- Take-Out

    I'm planning for all contingencies on Saturday. I'm not sure how I'm going to feel emotionally, so I figured it would be best to have a few different options in place.
