What's for Dinner: November 21 - November 27

Well, it's here.
Thanksgiving week.
We're only days away from my favorite holiday and my favorite meal of the year.
Our turkey, which my employer generously gifted to our family, is defrosting in the fridge... And now that I have all the ingredients I need to make the meal, I can sketch out the rest of my prep timeline.
I hope you and your loved ones are able to gather this week and enjoy some time together. I'm looking forward to having some time off from work and some time with the kids. After Thanksgiving, we'll go hunting for this year's Christmas tree... and then we'll start decorating the house in all things twinkling.
Other than that, my main goal over the next week is to slow down and drink in this special time of year. I may even take a break from social media to really give myself a chance to recharge.
In case that does happen... I want you to know that I'm so grateful for this blog and for the community that has grown from it. I'm grateful for the grace and support you've shown during my "quiet" times... and for the encouragement you've showered upon me during my "productive" ones.

A Week of Dinners: November 21 - November 27
- Sunday: Mongolian Beef Ramen
- Monday: Pesto Shrimp Pasta
- Tuesday: Ground Turkey Taco Night
- Wednesday: Leftovers
- Thursday: Happy Thanksgiving! 🦃
I've been making a Thanksgiving Dinner for four for a few years now, so our menu doesn't change too much from year to year. It feels extravagant, but we love living off the leftovers.

- Apple Chestnut Stuffing (I'll roast and peel the chestnuts the day before)
- Green Bean Casserole
- Mashed Sweet Potatoes (I'm going to miss these potatoes this year, but having them on the table, too, resulted in too much food... even with the promise of leftovers!)
- Orange Maple Cranberry Sauce (this is another dish I'll make the day before)
- Assorted pies from one of our favorite local restaurants
- Friday: Margherita Pizza
- Saturday: Leftovers / Take-Out
