What's for Dinner: November 28 - December 4

First Snow | Taste As You Go

I was in such good spirits when I woke up this morning. The first snowflakes of the season were falling outside our windows. Our grocery delivery arrived early within our delivery slot. And I was finally going to cash in my Mother's Day gift and head to the spa for a much-needed massage.

Then the phone rang.

The therapist I had booked with wasn't going to be able to make it to work, so they had to cancel my appointment.

Then the day went downhill from there. I was so looking forward to that appointment, looking forward to some time for myself... that my mood plummeted. 

I became all too aware, once again, of all the things I do for the family and all the things I do to make our house a home. Something inside my brain snapped and I didn't want anything to do with any of it anymore.

I didn't want to cook or do laundry. I didn't want to weed out the kids' closets for things that were too small. I didn't even want to continue decorating the house for Christmas. I was over it all.

Unfortunately, this all coincided with the realization that our daughter's school project... the one due after Thanksgiving Break... wasn't as far along as it should've been. So we spent a good chunk of the day helping her research and guiding her creative spirit while she put together her poster.

Despite my mood, I did make dinner... I did finish the laundry. I'm putting off the closet clean-out for another time and decorating can resume tomorrow. Hopefully...

A Week of Dinners: November 28 - December 4

  • Sunday: Spaghetti with Meat Sauce

    Yesterday, when I was in a better mood, I had thawed meatloaf mixed to make a double batch of meatballs. I was going to serve one batch tonight and freeze the other batch for another night.

    By lunchtime, I knew I wasn't going to make meatballs. So I used the meat for meat sauce instead.

  • Monday10-Minute Maple-Glazed Salmon with Jasmine Rice and Roasted Butternut Squash

  • Tuesday: Penne with Garlic and Olive Oil and Roasted Broccoli

  • Wednesday: Leftovers

  • ThursdaySlow Cooker Taco Chicken Bowls with Avocado and Rice

    I made a double batch of this recipe a couple of weeks ago. And... you guessed it. We ate one batch right away and I froze the other for another night.

    This is that night.

  • Friday: Pizza with Spicy Italian Sausage and Spinach
