What's for Dinner: December 12 - December 18

If you read my last post, then you know we've had a rough week in our house. Our daughter's school schedule had left her exhausted, and our son managed to catch a cold. He didn't even have it in him to enjoy his doughnut at breakfast this morning and put himself back to bed afterward.
Poor kid.
Now that we're in the final push before Christmas, the rest of us are just trying to stay healthy. Especially since my husband and I have work commitments later this week.
While I figure out a way to keep the kids apart so our daughter doesn't catch our son's cold, here's our menu plan for the week. Keep reading to see what's on deck for dinner at our house!
A Week of Dinners: December 12 - December 18
- Sunday: Three Bean Turkey Chili (adapted from this recipe) with Tortilla Chips
- Monday: Roasted Butternut Squash Soup and Toasted Baguette Slices
I've already roasted the vegetables for the soup, so all I have to do tomorrow is blend the vegetables with some homemade vegetable broth and toast the baguette slices.
Couldn't be easier! - Wednesday: Leftovers
- Friday: Frozen Pizza & Movie Night
My husband is traveling for work, and while he's more than likely home for dinner, I figured I'd go easy on myself. - Saturday: Stephen's Choice
On Saturday, it's my turn for a work event, so Stephen's in charge of getting dinner together. With any luck, there will still be some leftovers by the end of the week to use up so he doesn't need to cook anything from scratch.
