What's for Dinner: January 30 - February 5

Hello, Sunday.
I haven't wished harder for Sunday than I have in these last few days. If you haven't heard yet, my son and I tested positive for COVID last Tuesday... and we've been isolating away from my husband and daughter ever since.
They've remained COVID-free. THANK GOODNESS.
That little father-daughter power team has been incredible. I'm so grateful for everything they've done to provide for us... and I can't wait to give them both huge hugs when my isolation period is over.
Since I've turned the corner and my symptoms have all improved... except for lingering fatigue... I can return to regular life, including work, tomorrow!
I know you'd all understand if I had to skip sharing our menu plan this week... especially given everything our family has gone through over the past week. But I actually planned this week's meals last Monday, the day before testing positive.

A Week of Dinners: January 30 - February 5
- Sunday: Leftovers / Stephen's Choices
I originally planned to make this casserole for dinner tonight. But this week's snowstorm derailed our plans for a Take-Out Night, so my husband made the casserole last night.
In one of our lengthy text chains from the week, I offered to reconfigure the menu plan to make sure there was a recipe he could pull for tonight... but he replied "I'll figure something out. You've done plenty."
Later, he told me that he was so grateful that I had done all the dinner planning upfront. The menu plan made his life easier because all he had to do was follow the plan. No staring into the pantry or flipping through cookbooks or scrolling through recipe sites needed.
Teamwork makes the dream work. - Monday: Spaghetti and Basic Baked Meatballs with Marinara Sauce
Since Monday will, hopefully, be my first day out after being in isolation, we're keeping it simple. While the spaghetti is cooking, I'll rewarm a batch of meatballs I made and froze a few weeks ago in a pot of marinara sauce. - Tuesday: Take-Out Night
My husband didn't want us to lose out completely on our rare treat of a Take-Out Night. He thought picking up take-out would help keep my to-do list short as I transition back to our normal routine.
I love him immensely for this suggestion. - Wednesday: Leftover Night
- Saturday: Grilled Cheese with Tomato Soup
