What's for Dinner: September 18 - September 24

With the first full week of school behind us, our family is starting to fall into a decent rhythm.

We started off the week pretty strong but, by the end of the week, the kids and I were ready for some rest. My husband was on a work trip, so I had to balance everything on the homefront... and, I have to admit, I felt a little overwhelmed.

When I'm solo-parenting, I become acutely aware of time. Unfortunately, toward the end of the week, it felt like the kids took twice as long to finish certain tasks... and my frustration got the better of me.

Of course, me being me, I was super hard on myself and rolled into the weekend feeling like a failure. Needless to say, I'm ready to reset and start this week as strongly as we did last week.

To help me hit that goal, I have our menu plan ready to go. Keep reading if you want to see what's on deck for dinner at our house this week!

A Week of Dinners: September 18 - September 24

  • MondayApple Orchard Salad with Maple-Dijon Vinaigrette

    I'm going to adapt this recipe so I can use the Redcort apples we picked up at the farmers market this weekend. Can't wait to see how they transform the overall flavor of the salad!

  • TuesdaySlow Cooker Chicken Burrito Bowls with White Rice

    I'm changing the preparation up a little bit by serving this over rice. Because of this, I'll make most of the meal in the slow cooker and then cook the rice separately another night.

  • Wednesday: Dinner Out

    We have meetings at the kids' school on Wednesday night, so we'll eat out to make things easier. No sense in driving home to make dinner only to drive back to school for the meetings.

  • ThursdayHoney Garlic Shrimp Stir Fry with White Rice

  • Friday: Pepperoni Pizza

  • Saturday: Fish Sticks with French Fries and Peas

    If you saw last week's menu plan, then you know I planned this meal for last week. But we had so many leftovers in the refrigerator, I didn't need to make a new meal. So guess what got bumped to the new week?

Defrost/Prep Plan

  • Friday, September 16
    • Defrost sausage for Italian Sausage and White Bean Stew
    • Defrost chicken for Slow Cooker Chicken Burrito Bowls

  • Saturday, September 17
    • Make chicken stock

  • Sunday, September 18
    • Make Italian Sausage and White Bean Stew
    • Caramelize onions for Apple Orchard Salad with Maple-Dijon Vinaigrette
    • Make Slow Cooker Chicken Burrito Bowls
    • Freeze chicken stock -- Any stock I don't use right away in these dishes will go in our chest freezer for another time.

  • Monday, September 19
    • Make Apple Orchard Salad with Maple-Dijon Vinaigrette
    • Make rice for Slow Cooker Chicken Burrito Bowls
    • Create next week's menu plan
    • Order groceries
