What's for Dinner: January 29 - February 4

After a rough couple of weeks, I'm finally taking steps to take care of myself.
I'm sleeping more. I'm making time for activities that help me relax. I'm setting firmer boundaries so I don't overextend myself.
While my stress level hasn't decreased all that much... I am managing that stress in healthier ways. So that's a start.
This week is going to be busy, but there's a light at the end of the tunnel. The kids and I have a long weekend coming up, and we have some family fun planned. Can't wait!

A Week of Dinners: January 29 - February 4
- Sunday: Stuffed Pepper Casserole
- Monday: Baked Ginger Salmon and Peanut Noodles with Roasted Broccoli
- Tuesday: One Pot Garlic Butter Shrimp and Orzo
- Wednesday: Leftovers
- Thursday: Stephen's Choice
- Friday: Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella
- Saturday: Stir-Fried Beef and Asparagus with Flat Rice Noodles or Three-Cheese Tortellini with Marinara Sauce
I won't be doing any cooking ahead of time this week, and I can't decide whether that's a good thing or not. 😉
