What's for Dinner: May 14 - May 20
Wow.
It's been an incredibly busy week, complete with a couple of work events, my birthday, my 25th high school reunion, and Mother's Day... plus the initiation of some pretty big life changes.
The week was full, but every item on my schedule helped remind me of what's truly important.
While I continue to revel in all the memories I was able to build, here's our menu plan for the week!
A Week of Dinners: May 14 - May 20
- Sunday: Mother's Day
- Monday: Healthier Eggplant Parmesan with Angel Hair Pasta
- Tuesday: Stuffed Pepper Casserole
- Wednesday: Leftovers
- Thursday: Toasted Gnocchi with Peas
- Friday: Frozen Pizza Movie Night
- Saturday: Dinner Out
