I can't believe it's almost October -- where did September go?!?

We've gotten used to our new routine that includes swim practice three times a week for our oldest. Of course, now that we've found our footing, it's time to shake things up again.

October is always a busy work month for my husband and me, and next month is no exception. Wish us luck as we attempt to juggle it all.

For now, here's our latest menu plan. Read on to see what's on deck for dinner at our house this week!

After becoming obsessed with this gnocchi recipe over the summer, crisping gnocchi in a pan with olive oil is my new favorite way to prepare them. And, this gnocchi recipe with Brussels sprouts is so perfect for the fall.


Speaking of fall flavors, the family can't wait to dig into this farro risotto tomorrow night. Thanks to the Instant Pot, this dish is such an easy one to make during the week.

TuesdayHoney Garlic Chicken with Buttered Egg Noodles and Roasted Broccoli

I shopped our pantry for most of the ingredients for this chicken recipe. Instead of using chicken breasts, though, I'll finally use the two packages of chicken cutlets that have been taking up space in the chest freezer.

White Pizza with Fresh Arugula and Prosciutto | Taste As You Go

The kids' appetites have been insatiable now that they're back in school. Even more so on the nights when our daughter has swim practice... so I'm hedging my bets and planning on making two pizzas during this week's Pizza Night. 😉

Saturday: Stuffed Pepper Casserole

Hello, comfort food. We're ready for you. With any luck, we might even have some leftovers to enjoy the next day.
