What's for Dinner: February 23 - March 1 | A week of dinners on Taste As You Go

If you've been following my Instagram Stories today, then you know it was a big day for our family. More specifically, it was a big day for our sweet girl, who competed in her last swim meet of the season.

Since she's still a new competitive swimmer, she suffered from bouts of anxiety early on. But she put in the work week after week and was determined to finish the season strong. She had two goals for today - to fully compete in her events and to swim without worrying about her time.

Well... not only did she finish her events, she placed first in one of her heats! My heart burst seeing how happy she was and to see her confidence skyrocket.

Core memory, for sure.

With the early morning and the excitement of the meet, we were all pretty zonked by the time we got home. As we pulled into the driveway, I mentally gave myself a huge pat on the bat for prepping tonight's dinner last night so all I had to do was turn on the slow cooker before we left the house.

Another benefit of menu-planning!

Sunday: Slow Cooker Pot Roast 

To stretch this meal a little further, I sauteed mushrooms and garlic in some butter about 10 minutes before serving and then stirred in some frozen peas to add some more color. Then I shred the roast and combined everything in one pot.

Delicious!

Monday: Broccoli Soup with Spinach, Cilantro and Croutons 

Tuesday: Stuffed Pepper Soup 

I typically make Stuffed Pepper Casserole, but I'm excited to try this twist that uses sausage rather than beef.

Wednesday: Buffet Night

Thursday: Dad's Choice

Friday: Pizza with Eggplant, Grape Tomatoes, and Fresh Mozzarella

Saturday: Caprese Pasta Salad with Sun-Dried Tomatoes
