What's for Dinner: March 2 - March 8

Knowing that our Saturday was packed -- hair appointments, grocery delivery, a swim lesson, shopping for clothes for the kids, a trip to the library, and attending a high school musical performance -- I deliberately kept our schedule clear today.
But I put the time to good use by making tonight's dinner, baking bread for tomorrow night's dinner, and making meatballs for our daughter's birthday dinner next weekend.
(I'm in denial that she's turning ten this year.)
After dinner, we gathered around the fire and finished our family read-aloud book before sending the kids up to bed. And... after taking an hour to find the motivation to write this post, here we are.
Without further ado, here's our menu plan for the week!
This recipe calls for water, but I used some homemade chicken stock instead to deepen the flavor. Also, because the kids must be going through growth spurts... I made a double batch of the soup.
Monday: Tuscan White Bean Soup with Peasant Bread
With my daughter's swim season ending last week, it's time to get used to a new after-school routine... at least on Mondays.
My son has been asking about piano lessons for more than a year, and I finally found a teacher with availability that works for us. I'm crossing my fingers that he takes to lessons because it would be wonderful to share music with him.
Hence, I chose a simple meal to throw together and baked the bread ahead of time.
Wednesday: Caprese Pasta Salad with Sun-Dried Tomatoes
Yes, this was on last week's menu plan... but we had so many leftovers still in the fridge by the time the weekend rolled around that I didn't need to make this meal. So I pushed it to this week.
Thursday: Dad's Choice
Friday: Sweet and Spicy Pizza
I'm going to try my hand at making one of my favorite pizzas to order when we're out -- pizza topped with San Marzano tomatoes, mozzarella, and soppressata that's drizzled with a healthy dose of hot honey. Can't wait to see how this pie turns out!
