What's for Dinner: April 27 - May 3

We're about to head into another busy couple of months filled with lots of work commitments and spring activities for the kids. Especially now that our oldest has committed to the long course season with her swim team.
This means swim practice four evenings a week, so I'm going to have to alter my approach to menu-planning and meal-prepping so we don't drown.
Figuratively, of course.
I guess I better share this week's menu plan and get to bed so I'm as rested as possible. If you're curious to see what's on deck for dinner at our house this week, then keep reading!

Sunday: Slow Cooker Pork Tenderloin with Rice Pilaf and Roasted Asparagus
Monday: Dad's Choice
My husband is traveling for work later in the week, so I moved his night to cook to Monday. Let's see if he remembers. 😉
Tuesday: Taco Soup with Tortilla Chips
Wednesday: Buffet Night
Thursday: Caprese Pasta Salad with Sun-Dried Tomatoes
We're welcoming the month of May on Thursday. Many of you know that, in our house, May is also the Month of Mom thanks to my birthday and Mother's Day.
This year, both of those occasions happen to fall on the same day... and I'll be turning 45. Hoping for some fun festivities to celebrate!
Friday: Dinner Out
Saturday: Fusilli with Pesto and Green Beans
